How Love Led to the Creation of Uguisu!
Opened in 2015 in Azabujuban, Uguisu was born out of the determination of its owner, Asuka-san, who had worked in the food and beverage industry for a long time. He continued to work as a server at restaurants until he met his wife and long-life partner who motivated him to open his own izakaya. The name Uguisu was created by his wife, naming the izakaya after a green-colored Japanese bush warbler bird or “uguisu” in Japanese.
A Delicious Variety of Charred Yakitori
Their signature dishes are their yakitori (grilled chicken skewers)! They use tender and flavorful Daisen chicken from Tottori Prefecture and carefully grill the skewers with charcoal. Depending on the cut, each yakitori dish varies in taste and texture, from crispy chicken skin to juicy chicken thighs. Try their "omakase" option, for a variety of different skewers picked personally by the chef! In addition, their karaage (fried chicken) and motsuni (offal stew) are also popular choices.
Dry Sake - the Best Pairing with their Yakitori
Uguisu also serves a seasonal selection of mostly dry Japanese sake to go with their yakitori! The owner, Asuka-san, recommends enjoying their dry sakes with kawa tare (charred teriyaki chicken skin skewer). After eating the sweet and savory glazed skin, take a sip of sake to cleanse the palate for a combination that can be enjoyed endlessly.
A Hidden Space Reflecting the Everyday Life in Japan
Hidden in the small town of Azabujuban, Uguisu exists as a daily gathering place for local Japanese residents. When you climb up the stairs of the building and slide open the wooden door, you'll find a cozy space that, despite being a restaurant, feels like a familiar home. From the lively conversations with the staff to the huddling of Japanese locals at Horizataku (traditional Japanese sunken tables), you can discover the essence of daily life in Japan. For those who are not fluent in Japanese, do not hesitate to enter as they provide an easy-to-read English menu. With a laid-back and welcoming atmosphere, Uguisu welcomes you to visit them anytime!
